Secrets to Making Delicious FoodWe've found that simply adding a little extra salt can dramatically improve the taste and still be healthful. If you reduce the salt, it won't taste as good! Famous raw chef Juliano echos the same thought: "When preparing Raw cuisine, the two spices that really matter are: 1) Salt, for the incredible way it brings out the flavor of food, and 2) Jalepeno, which when used correctly takes a dish to a whole new level and drives the palate wild! Jalapeno fulfills an additional necessity in raw cuisine: it adds heat. These peppers give the illusion of raising the temperature of a dish that may not be necessarily evenly spicy. In small portions, it's still present, lurking in the background and enhancing the tongue's roller coaster ride of flavors and textures. The difference between good and amazing food is pushing these two ingredients &mdash salt and jalepeno &mdash to their limit; to the point where you've almost, but not quite, added to much. Instead, it tastes perfect!" From: "Raw : The Uncook Book: New Vegetarian Food for Life", by Juliano Brotman with Erika Lenkert, page 11. |
