Cookie Dough Cookies1 C. almond butter*3/4 t. Celtic Sea Salt 1 T. flax oil 1 T. walnut oil 1 T. honey (or use an extra date or two instead) 4 Medjool Dates, chopped 1/4 C. dried, shredded coconut Mix all ingredients together in a bowl. Roll into balls. Serve. The taste reminded us of cookie dough when we were kids. *You can make almond butter in the Vita-Mix by using 1 1/2 cups almonds, and a few tablespoons olive oil, enough to allow it to blend smoothly. Vita-Mix method starting with raw almondsBlend the following in the Vita-Mix until it looks like peanut butter:1 1/2 C. raw almonds 1 t. Celtic Sea Salt 1 1/2 T. flax oil 1 1/2 T. walnut oil Olive oil (1 to 4 T. to blend well) 1 T. Honey Dump out onto a plate or bowl and add dates and coconut. Mix with your hands if needed: 4 medjool dates, chopped fine 1/4 C. dried, shredded coconut Roll into small cookie balls and serve. |
